Pressure Cooker Milk Flan

Ingredients

1/4 cup boiling water
3 cups water (for the bain-marie and caramel)
1 1/4 cups fresh milk
2 eggs
3/4 cup granulated sugar
1 can condensed milk

Where to find ingredients

All ingredients such as sweetened condensed milk, eggs, sugar, and milk can be found in the baking and dairy aisles of any standard grocery store or supermarket.

Preparation method

  1. Crack the eggs one by one into a small bowl and transfer them to a larger mixing bowl.
  2. Beat the eggs gently using a wire whisk to combine the yolks and whites.
  3. Add the condensed milk and whisk thoroughly into the egg mixture.
  4. Pour the milk in gradually, stirring gently to avoid creating air bubbles.
  5. Set the custard mixture aside.
  6. In a pan, melt the sugar over low heat until it reaches a golden brown color, stirring with a spatula.
  7. Carefully add 1/4 cup of boiling water to the caramel, being cautious of hot splashes.
  8. Stir until the caramel syrup is smooth.
  9. Pour the caramel into an 18 cm tube pan, rotating the pan with a cloth to coat the bottom and sides.
  10. Strain the custard mixture directly into the caramel-lined pan.
  11. Cover the pan tightly with aluminum foil, folding the edges to secure it well.
  12. Line the bottom of the pressure cooker with a folded kitchen towel.
  13. Pour 3 cups of water into the pressure cooker for the water bath and place the pan inside.
  14. Close the pressure cooker and cook over low heat for 10 minutes once it reaches pressure.
  15. Release the pressure from the cooker carefully.
  16. Check if the surface of the pudding is set; remove the pan carefully.
  17. Remove the aluminum foil and let the pudding cool at room temperature.
  18. Refrigerate for at least 3 hours before unmolding.
  19. To unmold, gently warm the bottom of the pan over the stove.
  20. Run a knife around the edges to loosen the pudding, cover with a deep plate, and invert quickly in one motion.

Observations

Preparing flan in an electric pressure cooker speeds up the cooking time, allowing the dessert to be ready quickly. The secret to a smooth flan is to mix the ingredients without incorporating air and letting the batter rest before cooking.
