Ingredients
1/2 cup strong filtered coffee
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups sugar
500 g raw peanuts with skin
1 tablespoon cocoa powder
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups sugar
500 g raw peanuts with skin
1 tablespoon cocoa powder
Where to find ingredients
Raw peanuts with skin, cocoa, cinnamon and sugar are usually available from supermarkets, bulk bins and fresh-produce shops. Use strong brewed coffee as written; instant coffee is only a substitute if made strong.
Preparation method
- In a saucepan, combine the sugar with the strong filtered coffee and place over medium heat
- Stir continuously until the sugar dissolves and the syrup begins to thicken
- Add the raw peanuts with skin, cocoa powder, cinnamon and baking powder to the pan
- Mix all the ingredients well in the hot syrup until the mixture begins to dry and pull away from the bottom of the pan
- As soon as it reaches the dry stage, remove the pan from the heat
- Pour the peanut mixture into a previously greased baking tray
- Place in a preheated oven at a very low temperature (about 120°C) for approximately 15 minutes
- During the oven time, stir the peanuts occasionally to stop them sticking to the tray and to ensure even drying
- Remove from the oven and let cool completely before serving or storing
