Ingredients
1/2 cup cornflour
1/2 cup plain flour
1/2 cup caster sugar
100 g unsalted margarine
1/2 cup finely ground walnuts
100 g dark chocolate
2 tablespoons glucose syrup
3 tablespoons full cream milk
1 tablespoon unsalted butter
1/2 cup plain flour
1/2 cup caster sugar
100 g unsalted margarine
1/2 cup finely ground walnuts
100 g dark chocolate
2 tablespoons glucose syrup
3 tablespoons full cream milk
1 tablespoon unsalted butter
Where to find ingredients
Most ingredients like plain flour, caster sugar, milk, and butter are standard in any NZ supermarket. Cornflour is available in the baking aisle. For ground walnuts, you can find whole nuts in the baking or bulk-bin sections of most supermarkets and blitz them in a processor. Dark chocolate (look for at least 50-70% cocoa solids) is in the confectionary or baking aisle. Glucose syrup is a common baking staple found in the baking supplies section alongside syrups like golden syrup. If you cannot find glucose, it is best not to substitute it as it provides the specific texture required for the filling.
Preparation method
- In a medium bowl, combine the cornflour, plain flour, sugar, margarine and ground walnuts until you have a uniform dough
- Preheat your oven to 180°C (fan-forced or conventional)
- Lightly grease and dust a baking tray with a little extra flour
- Roll the dough into small, bite-sized balls and place them on the prepared baking tray
- Bake for about 10 minutes, or until the edges are just lightly golden
- While the biscuits are in the oven, make the filling: place the chopped dark chocolate, glucose syrup, milk and butter in a heatproof bowl over a pot of simmering water (bain-marie)
- Stir continuously until the chocolate has melted and you have a thick, smooth, glossy cream
- Remove the filling from the heat and set aside to cool slightly to a spreadable consistency
- Once the biscuits have cooled completely, sandwich them together in pairs using the chocolate filling
