Ingredients
2 kg large shrimp with shells (or 1 kg peeled)
Juice of 2 limes
Salt to taste
5 cloves garlic, crushed
1 small tin extra virgin olive oil
2 medium onions, chopped
4 tomatoes, peeled, seeded, and chopped
1 ½ tablespoons annatto powder
1 carton (520 g) tomato sauce with parsley and basil
2 tablespoons beef-flavored seasoning powder
15 fresh basil leaves, chopped
200 g butter
250 g requeijão cremoso
1 can (approx. 300 g) heavy cream
2 tablespoons cornstarch
2 bunches fresh coriander, chopped
2 bunches fresh spring onions, chopped

Preparation method
- Thoroughly wash the shrimp and marinate in the lime juice and salt for about 20 minutes.
- Rinse the shrimp again and drain completely.
- In a large pan, sauté the crushed garlic in the olive oil until golden.
- Add the chopped onion, annatto powder, and chopped tomatoes.
- Cook until the onion softens.
- Incorporate the tomato sauce, beef-flavored seasoning, and chopped basil.
- Add the butter and the shrimp to the pan.
- Cook over low heat for approximately 30 minutes, stirring occasionally.
- Add the requeijão cremoso and cook for about 10 minutes, stirring until the sauce thickens.
- If necessary, dissolve the cornstarch in a little of the broth taken from the pan and add it back to the mixture, cooking for another 3 minutes.
- Add the chopped coriander and spring onions.
- Turn off the heat and fold in the heavy cream.
- Mix gently until you obtain a homogeneous, creamy consistency.
