1 mullet (approx. 1.5kg), scaled but left intact

1 bunch flat-leaf parsley and spring onions, chopped
1 bunch fresh coriander, chopped
4 lemons
1 medium onion, finely diced
Sea salt to taste
1 tablespoon extra virgin olive oil
Where to find ingredients
Fresh mullet can be sourced from local fishmongers or the seafood counter at supermarkets like New World or Pak'nSave. Ensure you ask for the fish to be gutted while keeping the scales on. Herbs and lemons are readily available in the fresh produce section of any local greengrocer.
Preparation method
- Open the fish along the belly and remove the viscera, ensuring the scales remain entirely intact.
- Rinse the fish thoroughly with cold water and the juice of one lemon.
- Season the inside of the cavity generously with sea salt.
- Combine the diced onion, half of the chopped coriander, and half of the parsley and spring onion mixture.
- Toss the herbs and onion with a pinch of salt, the juice of one lemon, and the olive oil.
- Stuff the belly cavity of the fish with the herb and onion mixture.
- Secure the opening by sewing the edges of the belly together with cooking twine to keep the stuffing inside.
- Place the fish over hot charcoal, turning occasionally until the scales become golden and crisp.
- Serve the grilled fish immediately alongside a portion of steamed white rice.
