Ingredients
1 envelope of unflavored powdered gelatin
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (use the empty condensed milk can as a measure)
2 cups of plain yogurt
6 medium red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the syrup)
1/2 cup of water (optional, for the syrup adjustment)
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (use the empty condensed milk can as a measure)
2 cups of plain yogurt
6 medium red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the syrup)
1/2 cup of water (optional, for the syrup adjustment)
Where to find ingredients
You can find these items at local supermarkets, produce markets, or specialized Caribbean grocers. If red guavas are unavailable, guava paste diluted with water or canned guava nectar can serve as a substitute, though fresh fruit is ideal for the intended flavor.
Preparation method
- Hydrate the powdered gelatin in 6 tablespoons of cold water.
- Dissolve the hydrated gelatin in a bain-marie until completely smooth.
- In a blender, combine the sweetened condensed milk, milk, plain yogurt, and the dissolved gelatin, blending until smooth.
- Pour the mixture into a ring mold that has been lightly moistened with water.
- Refrigerate for approximately 4 hours, or until the flan is firm.
- While the flan sets, prepare the syrup: peel and dice the guavas.
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water.
- Cook over low heat for about 20 minutes, or until the guavas are very tender and beginning to break down.
- Remove from heat and transfer the contents to a blender. Process until you reach a smooth purée.
- Return the guava purée to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until the syrup thickens.
- If the syrup becomes too thick during cooking, add the remaining 1/2 cup of water to adjust the consistency.
- Let the guava syrup cool completely before serving it over the chilled flan.
