Ingredients

Where to find ingredients
Raw peanuts, sugar, bicarbonate of soda and corn syrup can be found in Jamaican supermarkets, shops and wholesale groceries, usually in the baking, nuts or pantry sections. If corn syrup is hard to find, glucose syrup may be used only as a substitute, with the original corn syrup preferred.
Preparation method
- Start by mixing the peanuts, sugar and corn syrup in a deep microwave-safe bowl
- Microwave the mixture on high power for 10 minutes, pausing the cooking a few times to stir well and make sure it cooks evenly
- As soon as you remove the bowl from the appliance, add the bicarbonate of soda and stir quickly so it is fully incorporated into the mixture
- Immediately spread the syrup on a stone counter or cold surface that has been greased beforehand with a little margarine
- Leave the sweet to rest until completely cool and only then break it into smaller pieces to serve
Observations
