Where to find ingredients
Raw peanuts with skin, sugar, coffee, cinnamon, baking powder and chocolate powder are available from Jamaican supermarkets, markets and grocery shops, especially in the baking, spice, coffee and nuts sections. Use plain cocoa powder only as a substitute for chocolate powder if needed, noting it is less sweet.
Preparation method
- In a saucepan, combine the sugar with the strong brewed coffee and place over medium heat
- Stir continuously until the sugar dissolves and the syrup starts to thicken
- Add the raw peanuts with skin, chocolate powder, cinnamon and baking powder to the pan
- Mix all the ingredients well in the hot syrup until the mixture starts to dry out and pull away from the bottom of the pan
- Once it reaches the dry stage, remove the pan from the heat
- Pour the peanut mixture into a previously greased baking tray
- Place in an oven preheated to a very low temperature, about 120°C, for approximately 15 minutes
- During the oven time, stir the peanuts occasionally so they do not stick to the tray and so they dry evenly
- Remove from the oven and leave to cool completely before serving or storing
