Ingredients
1 envelope (approx. 12g) unflavored gelatin powder
6 tablespoons cold water
1 can (397g) sweetened condensed milk
1 can (use the empty condensed milk tin as a measure) whole milk
2 pots (approx. 340g total) plain natural yogurt
6 medium red guavas
1/2 cup granulated sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for adjusting sauce consistency)
6 tablespoons cold water
1 can (397g) sweetened condensed milk
1 can (use the empty condensed milk tin as a measure) whole milk
2 pots (approx. 340g total) plain natural yogurt
6 medium red guavas
1/2 cup granulated sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for adjusting sauce consistency)
Where to find ingredients
Condensed milk and gelatin can be found in the baking aisle. Yogurt is in the dairy section. Fresh red guavas are available at specialty produce markets or well-stocked supermarkets; if unavailable, frozen guava pulp may be used as a substitute.
Preparation method
- Hydrate the gelatin powder in 6 tablespoons of cold water
- Dissolve the hydrated gelatin in a bain-marie until completely smooth
- In a blender, combine the condensed milk, whole milk, plain yogurt, and the dissolved gelatin, blending until smooth
- Pour the mixture into a ring mold lightly dampened with water
- Refrigerate for approximately 4 hours, or until the flan is firmly set
- While the flan sets, prepare the sauce by peeling and cubing the guavas
- Place the cubed guavas in a saucepan with the sugar and 1 1/2 cups of water
- Cook over low heat for about 20 minutes, or until the guavas are very tender and beginning to break down
- Remove from heat and transfer the mixture to a blender, processing until a smooth puree is achieved
- Return the guava puree to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens
- If the sauce becomes too thick during cooking, add the optional 1/2 cup of water to reach the desired consistency
- Allow the guava sauce to cool completely before pouring it over the unmolded flan
Observations
This yogurt flan with guava sauce is a classic, light, and refreshing treat that serves as the perfect end to any meal. The contrast between the mild, creamy flan and the bold, fruity sauce is universally appealing.
