Ingredients
3 cups of guava pulp, peeled
3/4 cup of honey
1 cup of water
Lemon juice to taste
3/4 cup of honey
1 cup of water
Lemon juice to taste
Where to find ingredients
Fresh guavas can be sourced from local greengrocers or vegetable stalls in Gambian markets. Honey is widely available in supermarkets, and lemons can be found in any fresh produce section.
Preparation method
- Place the guava pulp, honey, and water into a large saucepan.
- Place over medium-high heat and bring to a boil.
- Reduce the heat to maintain a gentle simmer for 10 minutes.
- Stir the mixture occasionally and skim off any foam that rises to the surface with a spoon.
- Transfer the cooked mixture to a blender.
- Pulse on low speed just enough to process the pulp without crushing the hard seeds.
- Pass the purée through a fine-mesh sieve set over a mixing bowl.
- Use a wooden spoon to press the mixture through, extracting all the liquid while keeping the seeds and leftover pulp in the sieve.
- Discard the seeds and fibrous remains left in the sieve.
- Finish by stirring the lemon juice into the strained purée.
