Where to find ingredients
Condensed milk and cocoa powder are widely available in standard Gambian supermarkets. For a true 'pudim' texture, use a standard full-fat condensed milk. If you cannot find high-quality cocoa powder, look in the baking aisle of larger grocery stores. Plain flour is easily sourced at any local market or grocery shop. Preparation method
- Start by blending the condensed milk in your liquidiser
- Mix in the butter
- Add the whole milk
- Add the egg yolks
- Add the plain flour
- Add the cocoa powder
- Blitz everything until you have a smooth, well-combined mixture
- Pour the mixture into a large mixing bowl
- Gently fold in the whisked egg whites using a wooden spoon
- Grease a large pudding mould or ring tin with a little butter
- Pour the batter into the prepared mould
- Bake in a preheated oven at 180°C for about 1 hour
- Take it out of the oven and let it cool completely for at least 2 hours
- Turn the cooled pudding out onto a serving plate
- Finish by sprinkling chocolate strands over the top
