Where to find ingredients
Find fresh shrimp and herbs in the local seafood and produce markets. Requeijão cremoso and annatto powder are typically available in specialty or ethnic grocery aisles. Table cream (creme de leite) can be found in the canned goods or baking section; a high-fat heavy cream may be used as a substitute if unavailable.
Preparation method
- Rinse the shrimp well and marinate in the lime juice and salt for about 20 minutes.
- Rinse the shrimp again thoroughly and drain well.
- In a large heavy-bottomed pot, sauté the crushed garlic in the olive oil until golden.
- Stir in the chopped onions, annatto powder, and diced tomatoes.
- Cook over medium heat until the onions are soft and translucent.
- Add the tomato sauce, beef seasoning powder, and chopped basil to the base.
- Stir in the butter and add the shrimp to the pot.
- Simmer over low heat for approximately 30 minutes, stirring occasionally.
- Add the requeijão cremoso and cook for about 10 minutes, stirring until the sauce thickens.
- If necessary, dissolve the cornstarch in a small amount of the cooking liquid, pour back into the pot, and cook for another 3 minutes.
- Stir in the fresh cilantro and green onions.
- Remove from the heat and stir in the table cream.
