1 medium-sized squash, cleaned and seeded

4 tablespoons of olive oil
1 onion, grated
2 cloves of garlic, minced
1 package of table cream (creme de leite)
Salt and black pepper to taste
1 package of tomato pulp
1 medium-sized squash, cleaned and seeded
1 cup of creamy processed cheese spread (requeijão)
Fresh chopped herbs to taste
4 tablespoons of olive oil
1 onion, grated
Where to find ingredients
Dried beef (carne seca) can be found at specialized international butchers; creamy processed cheese (requeijão) is available at gourmet delis or major supermarkets. For the squash, local farmers' markets or greengrocers offer the best seasonal varieties. Table cream can be replaced by thickened cream if unavailable.
Preparation method
- Cut a small lid from the top of the squash and remove the seeds with a spoon
- Wash the squash and the lid thoroughly
- In a large pot, bring water to a boil
- Without touching the water, place the squash upside down over the pot to steam until tender, approximately 30 minutes
- Follow the same process with the lid
- Remove the squash from the steam and let it cool slightly
- Set aside
- In a pan, heat the olive oil and sauté the garlic and onion until golden
- Add the tomato pulp, salt, pepper, and fresh herbs
- Mix well and add the shredded dried beef
- Cook for a few minutes to allow the flavors to meld
- Stir in the table cream and half of the creamy processed cheese
- Mix until you have a creamy and homogeneous filling
- Carefully spread the remaining half of the processed cheese inside the reserved squash
- Fill the squash with the meat and sauce mixture
- Garnish with fresh herbs on top
- Place the stuffed squash in a preheated oven at 180°C for about 20 minutes or until well heated and lightly browned
- Serve immediately, accompanied by white rice or salad
