Ingredients
1 medium onion, chopped
1/2 cup vegetable oil
1 kg minced meat (beef, pork or mixed)
2 beef stock cubes
1 cup water
6 tbsp cornflour

Preparation method
- In a large pan, heat the vegetable oil over medium heat
- Add the chopped onion and sauté until transparent and lightly golden
- Add the minced meat to the pan and cook, stirring to break it up, until it loses its pink colour and browns
- Dissolve the beef stock cubes into the meat mixture and mix well
- In a separate bowl, dissolve the cornflour in the cold water until smooth
- Pour the cornflour mixture into the pan with the meat, stirring constantly until the sauce thickens slightly
- Stir in the mashed potato and chopped parsley, mixing everything until the mixture is even
- Transfer the meat mixture to an ovenproof dish or Pyrex dish, spreading it out evenly
- Cover the surface of the meat loaf with the cream cheese spread, smoothing it into an even layer
- Bake in a preheated oven at 180°C for about 15-20 minutes, or until the cream cheese melts and turns lightly golden
- Remove from the oven and serve the meat loaf hot
