Where to find ingredients
Find fresh seafood and produce at local markets or supermarkets. For specific Brazilian items, look in the international aisle or specialized Latin American grocers. Requeijão (a creamy Brazilian cheese spread) can be substituted with a high-quality cream cheese mixed with a little heavy cream if necessary. Annatto can be found as a spice or oil substitute for coloring.
Preparation method
- Wash the shrimp thoroughly and marinate in lemon juice and salt for about 20 minutes.
- Rinse the shrimp again and drain completely.
- In a large pan, sauté the minced garlic in olive oil until golden.
- Add the chopped onions, annatto, and chopped tomatoes.
- Cook until the onions have softened.
- Incorporate the tomato sauce, seasoning powder, and chopped basil.
- Add the butter and the shrimp to the pan.
- Cook over low heat for approximately 30 minutes, stirring occasionally.
- Add the creamy requeijão and cook for about 10 minutes, stirring until the sauce thickens.
- If necessary, dissolve the cornstarch in a little of the broth taken from the pan, add it back to the mixture, and cook for another 3 minutes.
