Where to find ingredients
Find fresh produce and staples at local markets or supermarkets. Hearts of palm are available in jars in the canned goods section. As a substitute for 'cheiro-verde' (a mix of parsley and scallions), you may use a blend of fresh flat-leaf parsley and spring onions.
Preparation method
- In a bowl, mix the flour, mayonnaise, eggs, and salt; add water little by little as needed until you obtain a smooth and pliable dough.
- Heat the olive oil in a pan and sauté the grated onion until golden.
- Add the chopped bell peppers, heart of palm, olives, and tomato.
- Cook over medium heat for approximately 5 minutes, stirring occasionally.
- In a small container, dissolve the cornstarch in a little water or a bit of the heavy cream to ensure there are no lumps.
- Add the heavy cream and the dissolved cornstarch to the pan with the filling; cook for another 3 minutes, stirring constantly, until the sauce thickens.
- Season with salt to taste and fold in the chopped fresh herbs.
- Remove the filling from the heat and let it cool completely.
- In a pie dish, line the bottom and sides with half of the dough.
- Fill the pie with the cooled heart of palm mixture.
- Cover the pie with the remaining dough, sealing the edges well.
- Brush the surface with the beaten egg yolk.
- Bake in a preheated oven at 180°C for about 50 minutes, or until golden brown.
