Where to find ingredients
Look for the sausage, potatoes, milk, butter, and breadcrumbs in the supermarket chilled meats, dairy, produce, and baking aisles. Green olives and frying oil are usually in the canned foods and cooking oil sections. If needed, use a bacon or beef-stock cube substitute for the stock tablets.
Preparation method
- Place the water, milk, stock cubes, ground calabresa, potato, and butter in a large pan
- Bring the mixture to the boil
- Add all the wheat flour at once
- Stir vigorously until the dough pulls away completely from the bottom of the pan
- Turn the dough out onto a smooth surface that has been greased beforehand
- Knead the dough carefully and let it cool
- Divide the dough into small portions and flatten them with your hands
- Place an olive in the centre of each portion
- Seal the dough to form the signature coxinha shape
- Dip each piece in the beaten egg
- Coat the coxinhas in breadcrumbs
- Fry in hot oil until golden
- Drain on paper towels to remove excess fat before serving
Observations
This recipe uses calabresa sausage to make an irresistible savoury snack. The combination of potato and milk in the dough gives it a soft, light texture, ideal for parties or quick snacks.
