Easy and Delicious Heart of Palm Pot Pie

Ingredients

3 cups all-purpose flour
1 1/2 cups mayonnaise
2 eggs
2 teaspoons salt
1 to 3 tablespoons water
3 tablespoons olive oil
1 medium onion, grated
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
100g black olives, chopped
300g heart of palm, chopped
1 tomato, chopped
Chopped parsley to taste
200g single cream (heavy cream)
1 tablespoon cornstarch
Salt to taste
1 egg yolk for brushing

Where to find ingredients

Find heart of palm (canned) in the international or specialty canned goods aisle; single cream (or heavy cream) and cornstarch are in the baking or dairy aisles of any major supermarket.

Preparation method

  1. In a bowl, mix the flour, mayonnaise, eggs, and salt, adding water little by little if necessary until you obtain a smooth and malleable dough.
  2. In a saucepan, heat the olive oil and sauté the grated onion until golden.
  3. Add the chopped bell peppers, heart of palm, olives, and tomato.
  4. Cook over medium heat for approximately 5 minutes, stirring occasionally.
  5. In a small container, dissolve the cornstarch in a little water or a small amount of the cream to prevent lumps.
  6. Add the cream and the dissolved cornstarch to the saucepan with the filling, cooking for another 3 minutes while stirring until thickened.
  7. Season with salt to taste and stir in the chopped parsley.
  8. Remove the filling from the heat and allow it to cool completely.
  9. Line the bottom and sides of a pie dish with half of the dough.
  10. Fill with the cooled heart of palm mixture.
  11. Cover the pie with the remaining dough, sealing the edges well.
  12. Brush the surface with the beaten egg yolk.
  13. Bake in a preheated oven at 180°C (350°F) for about 50 minutes, or until golden brown.
