Parmigiana-Style Baked Rice (Arroz de Forno à Parmegiana)

Ingredients

2 cups rice
4 cups water
2 chicken stock cubes
3 peeled tomatoes
1 tablespoon tomato paste
2 eggs
3 tablespoons grated cheese
100 g diced ham
100 g diced mozzarella

Where to find ingredients

Rice, eggs, ham, and mozzarella are standard items available at any local supermarket or grocery store. You can find grated cheese in the dairy aisle; choose a mild, hard cheese like Parmesan or a local equivalent. Chicken stock cubes are found in the pantry staples section. For the best result, look for ripe, firm tomatoes in the produce department of your local market or supermarket.

Preparation method

  1. Dissolve one of the chicken stock cubes in a little hot water
  2. Place the peeled tomatoes, tomato paste, and the dissolved stock into a blender
  3. Blend everything until you have a smooth, homogeneous sauce
  4. Cook the rice in a pot with the 4 cups of water and the other stock cube for 15 minutes
  5. Lightly beat the eggs in a bowl
  6. Mix the grated cheese, diced ham, and mozzarella into the bowl with the eggs
  7. Fold this mixture into the cooked rice while it is still warm
  8. Spread a portion of the tomato sauce over the bottom of a baking dish
  9. Spread the rice mixture evenly over the sauce layer
  10. Cover the surface of the dish with the remaining tomato sauce
  11. Bake in a preheated oven at 180°C for 10 to 15 minutes until golden and bubbly

Observations

This recipe is a brilliant way to turn leftover rice into a special, one-dish meal. It results in a creamy, golden-brown gratin that's perfect for a fuss-free family lunch or dinner.
