Black-eyed pea vinaigrette: a zesty and fresh side (Vinagrete de feijão fradinho)

Ingredients

1 cup black-eyed peas (feijão-fradinho)
4 cups water for boiling
1 medium red onion
1/2 yellow bell pepper
2 medium tomatoes
1/4 cup extra virgin olive oil
2 tablespoons white wine vinegar
Juice of 1 lemon
1/4 cup fresh cilantro leaves
Salt to taste
Freshly cracked black pepper to taste

Where to find ingredients

You can find these fresh ingredients at local food markets or general grocery stores across the islands. For a substitute, black-eyed peas can be replaced with canned versions if you prefer a faster preparation, though boiling them fresh maintains the ideal texture.

Preparation method

  1. Place the black-eyed peas in a pressure cooker.
  2. Add the 4 cups of water.
  3. Seal the lid tightly and place over high heat.
  4. Once the cooker reaches pressure and begins to whistle, reduce the heat to low.
  5. Cook for 10 minutes.
  6. Dice the red onion into small, uniform cubes.
  7. Remove the seeds from the yellow bell pepper and dice it into small cubes.
  8. Halve the tomatoes, discard the seeds, and dice into small cubes.
  9. Wash and finely chop the fresh cilantro leaves.
  10. In a large mixing bowl, combine the diced onion, bell pepper, and tomato.
  11. Turn off the heat after the cooking time and allow the pressure to release naturally before opening.
  12. Drain the cooked peas into a fine-mesh sieve.
  13. Rinse the peas under cold running water to stop the cooking process and drain well.
  14. Add the cooked black-eyed peas to the bowl with the diced vegetables.
  15. Dress with olive oil, white wine vinegar, lemon juice, salt, and black pepper.
  16. Toss all ingredients together gently until well combined.
  17. Serve the vinaigrette immediately, garnished with fresh cilantro leaves.
