Where to find ingredients
You can find fresh seafood and produce at local markets or grocery stores. Requeijão (a creamy Brazilian cheese spread) and annatto powder can be found in specialty Latin food aisles; as a substitute for requeijão, you may use a blend of cream cheese and heavy cream to reach a similar consistency.
Preparation method
- Wash the shrimp thoroughly and marinate in lemon juice and salt for about 20 minutes.
- Rinse the shrimp again and drain completely.
- In a large pan, sauté the crushed garlic in the olive oil.
- Add the chopped onion, annatto, and chopped tomato.
- Cook until the onion softens.
- Incorporate the tomato sauce, beef-flavored seasoning, and chopped basil.
- Add the butter and the shrimp to the pan.
- Cook over low heat for approximately 30 minutes, stirring occasionally.
- Add the creamy requeijão and cook for about 10 minutes, stirring until the sauce thickens.
- If necessary, dissolve the cornstarch in a little of the broth taken from the pan and add to the mixture, cooking for another 3 minutes.
- Add the chopped cilantro and green onions.
- Turn off the heat and fold in the table cream.
- Mix gently until you achieve a homogeneous creamy consistency.
