Traditional Cassava and Salt-Cured Beef Pie

Ingredients

1 kg cassava, boiled
1 litre whole milk
1/2 kg creamy processed cheese spread (requeijão)
2 kg salt-cured beef (carne seca), boiled and shredded
200g onion, chopped
200g salted butter
Grated Parmesan cheese for topping

Where to find ingredients

Cassava can be found in the produce section of local Caribbean markets; salt-cured beef and creamy cheese spread are available in the meat and dairy aisles of major supermarkets or specialty Latin grocery stores.

Preparation method

  1. Prepare the cassava mash: in a blender, process the boiled cassava with the whole milk and creamy cheese spread until the mixture is smooth and velvety
  2. Prepare the filling: in a pan, melt the butter and sauté the chopped onion until translucent
  3. Add the shredded salt-cured beef to the pan with the onions and sauté for a few minutes to allow the flavours to meld
  4. Assemble the dish: in a baking dish, spread a base layer of the cassava mash
  5. Cover the mash base with the entire salt-cured beef filling, spreading it evenly
  6. Finish by topping the beef layer with the remaining cassava mash
  7. Sprinkle grated Parmesan cheese over the top layer of the mash for the crust
  8. Place in a preheated oven at 180°C for approximately 10 minutes, or until the cheese is golden and a crust has formed
  9. Serve the pie warm and garnish as desired
