Minced garlic to taste
Where to find ingredients
Picanha is a premium cut of beef, often available at most supermarkets in the meat section. For the best quality, visit a local butcher or a Brazilian/Latin American specialty market. Coarse salt is widely available in the salt aisle of any supermarket. Minced garlic can be purchased pre-minced in jars, or you can mince fresh garlic cloves yourself, available in the produce section of any grocery store.
Preparation method
- Cover the entire piece of picanha with coarse salt
- Let the salt marinate for 30 to 40 minutes
- Make shallow crosswise cuts on the meat, without cutting all the way through
- Remove excess salt from the picanha by lightly patting it
- Cover the entire piece with the minced garlic
- Prepare the grill with medium embers
- Place the picanha on the grill about 60 cm away from the heat, with the fat side facing up
- Grill until it reaches your desired doneness, avoiding overcooking to maintain juiciness
