Where to find ingredients
Look for canned or jarred hearts of palm, mayonnaise, cream, olives, and vegetables in the supermarket produce aisle and tinned foods section, or at the market stalls and deli counter. If hearts of palm are unavailable, artichoke hearts can be used as a substitute, but the original ingredient is ideal.
Preparation method
- In a bowl, mix the wheat flour, mayonnaise, eggs and salt. Add the water little by little, if needed, until you get a smooth, pliable dough
- In a pan, heat the olive oil and sauté the grated onion until golden
- Add the chopped bell peppers, chopped hearts of palm, chopped olives and chopped tomato
- Cook over medium heat for about 5 minutes, stirring occasionally
- In a small bowl, dissolve the cornstarch in a little water or in the cream itself so it does not form lumps
- Add the cream and the dissolved cornstarch to the pan with the filling. Cook for another 3 minutes, stirring constantly, until the sauce thickens
- Season with salt to taste and add the chopped fresh herbs
- Remove the filling from the heat and let it cool completely
- In a pie dish, line the bottom and sides with half of the dough
- Fill with the cooled hearts of palm filling
- Cover the pie with the remaining dough, sealing the edges well
- Brush the surface with the beaten egg yolk
- Bake in a preheated oven at 180°C for about 50 minutes, or until golden
