Ingredients
100 g demerara sugar
500 ml plant-based milk
ground cinnamon for sprinkling
4 ears fresh green corn
1 pinch salt
500 ml plant-based milk
ground cinnamon for sprinkling
4 ears fresh green corn
1 pinch salt
Where to find ingredients
In Singapore, fresh corn, demerara sugar, plant-based milk, cinnamon and salt can be found in supermarkets and wet markets. Use fresh corn cobs for the original flavour; canned corn is only a substitute if fresh corn is unavailable.
Preparation method
- Cut the corn kernels from the cobs using a sharp knife
- Place the kernels in the blender, add the plant-based milk and blend until smooth
- Pass the mixture through a fine or medium sieve, pressing well to extract all the juice and discard the fibres
- Transfer the strained liquid to a pan, adding the sugar and the pinch of salt
- Cook over medium heat, stirring constantly with a spatula so lumps do not form on the bottom of the pan
- As soon as it starts to boil, reduce the heat and keep stirring until the cream thickens and reaches the desired consistency
- Pour the curau into a large dish or individual small bowls
- Let it cool at room temperature and then place it in the fridge to firm up
- Finish by sprinkling ground cinnamon over the top before serving
Observations
Curau de milho is a beloved Brazilian corn dessert, appreciated for its fresh corn flavour and dense, creamy texture. This version uses fresh cobs for a clean aroma and natural sweetness.
For a smooth finish, strain the blended corn well and keep stirring during cooking so the cream thickens without lumps.
