Ingredients
1 sachet of unflavoured gelatin powder
6 tablespoons cold water
1 can sweetened condensed milk
1 can whole milk (use the empty condensed milk tin to measure)
2 cups plain yoghurt
6 medium red guavas
1/2 cup caster sugar
1 1/2 cups water (for the coulis)
1/2 cup water (optional, to adjust consistency)
6 tablespoons cold water
1 can sweetened condensed milk
1 can whole milk (use the empty condensed milk tin to measure)
2 cups plain yoghurt
6 medium red guavas
1/2 cup caster sugar
1 1/2 cups water (for the coulis)
1/2 cup water (optional, to adjust consistency)
Where to find ingredients
Condensed milk and plain yoghurt can be found at any local supermarket like FairPrice, Cold Storage, or Sheng Siong. For fresh red guavas, check the fruit section at your neighbourhood wet market or the produce aisle in major supermarkets. Unflavoured gelatin powder is easily available in the baking aisle of any grocery store. If you have trouble finding fresh red guavas, you can use guava paste (goiabada) or frozen guava pulp, though the flavour profile will be sweeter and less fresh-tasting.
Preparation method
- Bloom the gelatin in the 6 tablespoons of cold water
- Dissolve the hydrated gelatin in a bain-marie until completely smooth
- Blend the condensed milk, whole milk, yoghurt, and dissolved gelatin until silky
- Pour the mixture into a ring mould that has been lightly rinsed with water
- Refrigerate for about 4 hours or until the flan is properly set
- While the flan sets, prepare the coulis by peeling and cubing the guavas
- In a saucepan, combine the guava cubes, sugar, and 1 1/2 cups of water
- Simmer over low heat for 20 minutes until the fruit is very soft and beginning to break down
- Remove from heat and blend until you have a smooth purée
- Return the purée to the pan and cook on low for another 15 minutes, stirring occasionally, until it thickens into a rich syrup
- If the coulis becomes too thick, stir in the additional 1/2 cup of water until you reach your preferred consistency
- Allow the guava coulis to cool completely before drizzling it over the chilled flan
Observations
This yoghurt flan with guava coulis is a beloved Brazilian treat—light, cooling, and just the thing to wrap up a meal on a humid day. The contrast between the smooth, mild flan and the intense, tangy fruit topping is a true crowd-pleaser.
