Where to find ingredients
In Singapore, you can find condensed milk, cream, sugar and concentrated passionfruit juice at local supermarkets, while fresh passionfruits are usually available at supermarkets, wet markets and fruit stalls.
Preparation method
- In a blender, add the condensed milk, cream and concentrated passionfruit juice
- Blend until the mixture is smooth and creamy
- Transfer the mixture to a nice serving dish or individual cups
- Chill in the fridge for at least 2 hours, or until well set
- If you want to speed it up, you can place it in the freezer for about 30-40 minutes
- While the mousse is chilling, prepare the syrup: in a saucepan, mix the sugar and water
- Cook over medium heat until the sugar dissolves and forms a thread-stage syrup
- Add the passionfruit pulp to the syrup, stirring gently
- Cook for another 1 or 2 minutes, just to warm through and combine the flavours
- Remove from the heat
- Once the mousse is firm, pour the passionfruit syrup over the top before serving
Observations
Passionfruit mousse is a classic and much-loved dessert in Brazilian cooking, perfect for ending any meal with a refreshing touch. It is wonderfully simple to prepare, ideal when you want something fuss-free without giving up flavour. The sweetness of condensed milk balanced with the bright acidity of passionfruit creates a creamy texture and a lovely balance between tart and sweet.
