Where to find ingredients
Wheat flour, breadcrumbs, oil, sugar, salt, eggs and fresh milk are available from supermarkets, trade stores and market shops. Fresh baker's yeast is usually found in the chilled bakery section or from bakeries; if it is not available, ask for a baking yeast substitute and follow the packet conversion.
Preparation method
- Put the warm milk, yeast, oil, sugar, salt and eggs in a blender and blend well until the mixture is smooth
- Pour the blender mixture into a large bowl and add the wheat flour little by little, kneading until the dough is smooth and elastic
- Divide the dough into two equal portions
- Grease the tins with oil and sprinkle with breadcrumbs, then place each portion of dough into them
- Leave the dough to rest in a sheltered warm place until it doubles in size
- Microwave one tin at a time for 7 to 9 minutes, adjusting the time according to the power of your appliance
- Turn the bread out while still warm onto a plate
Observations
This microwave bread is a practical way to make fresh bread when you want a simpler method than oven baking. With basic pantry ingredients and a short cooking time, it gives a soft loaf that suits tea, breakfast or a quick snack.
