Homemade Palm Heart Pie with Shortcrust Pastry (Torta de palmito com massa podre)

Ingredients

300 g cooking margarine or lard
500 g wheat flour
Juice of 1/2 lemon
1 egg
Salt to taste
1 jar palm hearts
1 1/2 cups milk
3 tablespoons wheat flour
1/2 grated onion
Nutmeg to taste
Pepper to taste

Where to find ingredients

Look for the palm hearts in the canned vegetables aisle, and the flour, margarine, milk, eggs, onion, salt, nutmeg and pepper in the baking or pantry section. If needed, butter can be used as a substitute for the cooking margarine.

Preparation method

  1. Prepare the dough by mixing the margarine (or lard), wheat flour, lemon juice, egg and salt until you have a coarse crumb texture
  2. Refrigerate the dough for at least 30 minutes before using it
  3. Prepare the filling: in a pan, make a white sauce with the milk and 3 tablespoons of wheat flour, first dissolved in a little cold milk so it does not lump
  4. Add the grated onion and 1/2 jar of palm hearts blended with 1/2 cup of milk
  5. Cook the white sauce over low heat, stirring constantly, until it thickens slightly
  6. Season the sauce with salt, nutmeg and pepper to taste
  7. Add the remaining chopped palm hearts to the sauce and mix well
  8. Line a baking tin with the dough, pressing it out with your hands to cover the base and sides
  9. Pour the palm heart filling over the dough
  10. Cover the pie with the remaining dough, shaping it as you like
  11. Bake in a preheated high oven for about 40 minutes, or until the pastry is golden and the filling is bubbling

Observations

This palm heart pie with shortcrust pastry is a classic of Brazilian cooking, ideal for anyone looking for a savoury bake that is both comforting and full of flavour. The shortcrust pastry, known for its crumbly and delicate texture, contrasts beautifully with the creamy, well-seasoned palm heart filling. It is a versatile option, perfect for serving as a main dish at a light lunch, as a starter at a special dinner, or even as a more refined snack.

Preparing the shortcrust pastry takes a bit of care to get the right texture, but the finished result is well worth it. The filling is simple to make and brings out the mild flavour of the palm hearts. Serve it hot and enjoy this homemade treat.
