Ingredients

1/2 cup vegetable oil
8 ripe tomatoes, peeled, deseeded and chopped
2 ripe tomatoes, sliced into thin rounds, for decoration
1 small green bell pepper, diced
1 small red bell pepper, diced
1 can sweet corn, drained
1 can green peas, drained
1 can heart of palm, chopped
2 hard-boiled eggs, roughly chopped
2 hard-boiled eggs, sliced into rounds for decoration
2 cans sardines, drained, boneless, and flaked
4 tablespoons chopped fresh parsley and spring onions
6 vegetable or chicken bouillon cubes
4 cups fine corn flour
2 tablespoons fine cassava flour
1 red chili, chopped or hot sauce to taste
Black olives for decoration

Where to find ingredients

You can find these ingredients at local grocery stores, supermarkets, or farmers' markets. Fine corn flour and cassava flour are often found in the specialty ethnic aisles or grain sections. Canned goods like sardines, corn, peas, and heart of palm are readily available in the pantry aisles of major food retailers.

Preparation method

  1. Prepare the mold: line the bottom and sides of a pudding or cake tin with tomato slices, boiled egg rounds, and a few sardine fillets for decoration.
  2. Sauté the aromatics: heat the vegetable oil in a large pot and sauté the 8 chopped tomatoes and the diced bell peppers until they are soft.
  3. Add the remaining ingredients: stir in the chopped heart of palm, peas, corn, chopped eggs, flaked sardines, and chopped chili. Mix well.
  4. Prepare the broth: dissolve the 6 bouillon cubes in 4 cups of boiling water and pour over the ingredients in the pot. Let it simmer for a few minutes.
  5. Incorporate the flours: gradually add the fine corn flour and cassava flour while stirring constantly to prevent lumps, until you achieve a firm and homogeneous mixture.
  6. Cook the base: continue cooking and stirring for about 5 to 10 minutes until the mixture thickens well and pulls away from the bottom of the pot.
  7. Assemble the cuscuz: pour the mixture into the prepared mold, smoothing the surface with a spatula to compress it slightly.
  8. Unmold and serve: once it has cooled to room temperature, unmold the cuscuz onto a serving plate. Decorate with the black olives and serve immediately.
