Traditional Feijão Tropeiro (Feijão tropeiro)

Ingredients

500 g cooked carioca beans
200 g diced toucinho
1 ladle oil
1 medium onion, chopped
4 cloves garlic
5 eggs
1 tablespoon garlic salt
Chopped fresh herbs (parsley and chives) to taste
200 g cassava flour

Where to find ingredients

Look for cooked carioca beans, cassava flour, bacon or pork belly, eggs, onions, garlic, salt with garlic, and fresh herbs in the dried beans, meat, eggs, produce, and pantry sections of local supermarkets or open-air markets. If needed, bacon or pork belly can be used as a substitute for toucinho.

Preparation method

  1. In a pan, heat the oil and brown the chopped onion
  2. Add the diced toucinho and fry well until crisp
  3. Add the chopped garlic and garlic salt, sautéing for another minute
  4. Add the eggs and mix gently, cooking until set but not broken up
  5. Stir in the cooked carioca beans
  6. Lower the heat and add the cassava flour little by little, stirring constantly so it does not clump and forms a moist farofa
  7. Finish with the chopped fresh herbs and mix well

Observations

Feijão tropeiro is a hearty, flavorful dish deeply rooted in Brazilian cooking, especially in the states of Minas Gerais and Goiás. Its origins go back to the days of the tropeiros, who carried dried, easy-to-store ingredients to prepare nourishing meals on long journeys. This recipe is ideal for anyone looking for comforting food, combining the texture of beans with the crunch of fried ingredients and the moisture of farofa.

It is a complete meal that can be served as a main dish or a side, and it appeals to all tastes with its unique mix of flavors and textures. The simplicity of the method, together with the tasty result, makes feijão tropeiro a timeless classic.
