Ingredients
2.5 liters of cold water
500 g of green beans
2 beef bouillon cubes
3 tablespoons of vegetable oil
1 paio sausage, sliced
1 grated onion
1 clove of garlic, minced
1/2 tablespoon of chopped cilantro
2 1/2 cups of white rice
150 g of queijo coalho, thinly sliced
500 g of green beans
2 beef bouillon cubes
3 tablespoons of vegetable oil
1 paio sausage, sliced
1 grated onion
1 clove of garlic, minced
1/2 tablespoon of chopped cilantro
2 1/2 cups of white rice
150 g of queijo coalho, thinly sliced
Where to find ingredients
You can find green beans and standard staples at local grocery stores. For authentic Brazilian ingredients: 'paio' sausage and 'queijo coalho' can typically be sourced at specialty Latin markets or international food retailers. As a substitute for queijo coalho, you can use halloumi, which shares a similar texture and heat-resistance.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and cook them in a pot with 2.5 liters of cold water and the beef bouillon cubes.
- Cover the pot and cook over low heat for approximately 1 hour, or until the beans are tender.
- While the beans are cooking, heat the oil in a separate pan.
- Brown the sliced paio, grated onion, and minced garlic in the oil.
- Add the rinsed and drained rice and the chopped cilantro to the pan, and sauté well for a few minutes.
- Incorporate the cooked beans along with their cooking liquid into the rice mixture.
- Stir all ingredients together, cover the pot, and cook over low heat until the rice is tender and the mixture remains moist and creamy.
- Distribute the thin slices of queijo coalho over the top of the rice.
- Cover the pot again and allow the residual steam to melt the cheese for a few minutes.
- Serve the Baião de Dois hot, accompanied by fried or roasted sun-dried beef (carne-de-sol), if desired.
