Where to find ingredients
You can find fresh produce like onions and carrots in the vegetable aisle of local supermarkets or at island produce stands. Long-grain white rice is readily available in the grains or pantry staples section of any grocery store.
Preparation method
- Wash and peel the carrot.
- Grate the carrot using the fine side of a grater.
- Finely dice the onion.
- Measure slightly more than 3 cups of water in a kettle and bring to a simmer over low heat.
- Warm a medium saucepan over low heat.
- Pour in the olive oil.
- Add the diced onion and grated carrot to the pan.
- Season with salt.
- Sauté the vegetables for 2 minutes until tender.
- Add the rice and the bay leaf to the pan.
- Stir well so every grain of rice is thoroughly coated with the oil.
- Measure exactly 3 cups of the boiling water and pour it over the rice.
- Give it one last stir and increase the heat to medium.
- Refrain from stirring the rice from this point on.
- Wait until the water reduces to the level of the grains.
- Reduce the heat to the lowest setting.
- Cover the pan partially with the lid.
- Cook until all the water has been absorbed.
- Test for doneness by inserting a fork all the way to the bottom of the pot.
- Turn off the heat.
- Keep the pan covered for another 5 minutes to allow the steam to finish the cooking process.
- Fluff the grains gently with a fork.
- Toss the carrots lightly to distribute.
- Transfer to a serving bowl and serve immediately.
Observations
Incorporating this dish into your daily routine is a fantastic way to brighten up your meal with extra color and nutrition. The secret to achieving perfectly fluffy grains lies in properly sautéing them before adding the boiling water.
