Creamy Spiced Milk Sweet (Espera marido)

Ingredients

1 tin condensed milk
1 tin measure of milk
3 cloves
1 cinnamon stick
3 eggs
3 egg yolks
Ground cinnamon for sprinkling

Where to find ingredients

Condensed milk, eggs, cinnamon and cloves are available in supermarkets, trade stores and market stalls; choose fresh eggs and whole spices where possible for a fuller aroma.

Preparation method

  1. Put the condensed milk, milk, cloves and cinnamon in a saucepan
  2. Place over the heat and let the mixture come to the boil
  3. Lightly beat the eggs and egg yolks in a separate bowl
  4. Add the beaten eggs to the boiling milk in the saucepan
  5. Keep over low heat
  6. Stir now and then with a wooden spoon to keep larger pieces in the texture
  7. Cook until it reaches a spoonable sweet consistency
  8. Transfer the mixture to a compote dish
  9. Finish by sprinkling ground cinnamon over the top

Observations

This traditional sweet has a creamy body and warm spice aroma, making it good served cold or at room temperature. It is simple enough for home cooking but still feels special on the table.
