Easy Walnut Mousse (Mousse de nozes)

Ingredients
8 eggs
1 litre milk
300 grams ground walnuts
400 grams chocolate drink powder
2 tins condensed milk
3 small 200 gram cartons cream
1 packet unflavoured clear gelatine dissolved according to the instructions

Where to find ingredients
Walnuts, condensed milk, cream, milk, eggs, chocolate drink powder and unflavoured gelatine can be found in supermarket baking, dairy and dry goods sections; whole walnuts may also be sold at market stalls.
Preparation method
- Separate the egg yolks from the whites
- In a still-cold saucepan, put the milk and the egg yolks passed through a sieve
- Add the chocolate drink powder and condensed milk
- Place over medium heat and cook for about 15 minutes, stirring continuously until you have a thick cream
- Remove the pan from the heat
- Fold in the ground walnuts and cream
- Add the already dissolved clear gelatine
- Gently mix in the beaten egg whites until the mixture is even
- Transfer the mixture to a glass dish
- Place in the freezer for about 2 hours until it takes on a mousse consistency
- Keep watch so the contents do not freeze solid
- Decorate the top with whole walnuts before serving
- Keep the dessert in the fridge after it has first been served
Observations
This practical dessert works well after meals. The secret is folding in the beaten egg whites gently so the sweet stays light.
