Ingredients
1 envelope unflavoured powdered gelatin
6 tablespoons cold water
1 can condensed milk
1 can milk (use the condensed milk can as the measure)
2 pots natural yoghurt
6 medium red guavas
1/2 cup sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for the sauce)
6 tablespoons cold water
1 can condensed milk
1 can milk (use the condensed milk can as the measure)
2 pots natural yoghurt
6 medium red guavas
1/2 cup sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for the sauce)
Where to find ingredients
Look for powdered gelatin, condensed milk, natural yoghurt, sugar, and guavas in the baking aisle, dairy section, and fresh produce market. If guavas are unavailable, a similar ripe tropical fruit can be used only as a substitute, but guava is the ideal choice.
Preparation method
- Soak the powdered gelatin in 6 tablespoons of cold water
- Place the hydrated gelatin in a bain-marie until it dissolves completely
- In a blender, blend the condensed milk, the milk, the natural yoghurt and the dissolved gelatin
- Pour the cream into a ring mould previously moistened with water
- Refrigerate for about 4 hours, or until the flan is set
- While the flan chills, prepare the sauce: peel and cut the guavas into cubes
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water
- Cook over low heat for about 20 minutes, or until the guavas are very soft and starting to break down
- Remove the saucepan from the heat and transfer the contents to a blender. Blend until smooth
- Return the guava purée to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens
- If the sauce becomes too thick while cooking, add the optional half cup of water to adjust the consistency
- Let the guava sauce cool completely before serving it over the flan
