Ingredients

1 tin condensed milk
1/4 cup boiling water
3 cups water (for the water bath and caramel)
1 1/4 cups milk
2 eggs
3/4 cup sugar

Preparation method

  1. Break the eggs individually into a small bowl and transfer them to a larger container
  2. Beat the eggs gently with a wire whisk to mix the yolks and whites
  3. Add the condensed milk and incorporate it well into the egg mixture
  4. Pour in the milk gradually, stirring delicately to avoid forming air bubbles
  5. Set the flan mixture aside
  6. In a saucepan, melt the sugar over low heat until you get a golden tone, stirring with a spatula
  7. Carefully add 1/4 cup of boiling water to the caramel syrup, being mindful of the splashes
  8. Stir until the syrup becomes smooth
  9. Pour the caramel into an 18 cm ring mould, rotating the mould with a cloth to cover the bottom and sides
  10. Strain the flan mixture directly over the caramelised mould
  11. Cover the mould by sealing it well with aluminium foil, folding the edges to secure it
  12. Line the bottom of the pressure cooker with a folded kitchen towel
  13. Add 3 cups of water to the pressure cooker for the water bath and place the flan mould inside
  14. Close the pressure cooker and cook over low heat for 10 minutes after it reaches pressure
  15. Release the pressure from the cooker carefully
  16. Check if the surface of the flan is firm; remove the mould carefully
  17. Remove the aluminium foil and let the flan cool at room temperature
  18. Refrigerate for at least 3 hours before turning it out
  19. To turn it out, lightly heat the bottom of the mould over the stove
  20. Run a knife around the sides to loosen the flan, cover with a deep plate and flip it over in one go
