Preparation method
- Blitz the mango in a blender until you have a perfectly smooth purée
- Set the mango purée aside for a moment
- In a clean mixing bowl, whisk the egg whites with a mixer until they start to get foamy
- Gradually add the sugar while continuing to whisk until you reach stiff, glossy peaks
- Set your beaten egg whites aside
- Pour the water into a small bowl and sprinkle the gelatin evenly over the surface
- Let the gelatin soak (bloom) for about 1 minute
- Gently heat the gelatin mixture over a double boiler or bain-marie until it is completely liquid and clear
- Stir the dissolved gelatin into your mango purée until well combined
- Fold in the natural yogurt and the lemon zest, mixing until the base is nice and uniform
- Very gently fold the beaten egg whites into the mango mixture using a spatula, keeping it as airy as possible
- Pour the mousse into your serving bowls or individual ramekins
- Chill in the fridge for at least 4 hours to set properly before serving
- Top with a few thin slices of fresh mango just before bringing to the table
