Ingredients
4 eggs
1 1/2 cups sugar
2 tbsp unsalted butter
2 packs (100 g each) coarsely grated coconut
1 1/2 cups whole milk
2 tbsp heaped corn starch (maizena)
1 1/2 cups sugar
2 tbsp unsalted butter
2 packs (100 g each) coarsely grated coconut
1 1/2 cups whole milk
2 tbsp heaped corn starch (maizena)
Where to find ingredients
Find the ingredients in the baking aisle, dairy section, and egg section of any supermarket, or at neighbourhood provisions shops and open markets. If needed, use cornflour as a substitute for corn starch, but keep the original ingredient if that is what you have.
Preparation method
- In a bowl, beat the butter with the sugar until you get a light, fluffy cream
- Add the eggs one at a time, beating well after each addition
- Mix in the grated coconut, the milk, and the corn starch dissolved in a little milk, if needed to make it easier
- Stir all the ingredients vigorously until you have a smooth, even batter
- Pour the batter into a baking pan previously greased with butter
- Bake in a preheated medium oven (about 180°C) until the empadão is golden and set
