Creamy Shrimp in Herb Sauce (Camarão ao creme)

Ingredients

2 kg large shrimp, shell-on (or 1 kg peeled)
Juice of 2 limes
Salt to taste
5 cloves garlic, crushed
1 small tin extra virgin olive oil
2 medium onions, chopped
4 tomatoes, peeled, seeded, and chopped
1 ½ tablespoons annatto (colorau)
520 g tomato sauce with herbs
2 tablespoons beef-flavored seasoning powder
15 fresh basil leaves, chopped
200 g butter
250 g requeijão cremoso
1 can (approx. 300 ml) table cream
2 tablespoons cornstarch
2 bunches fresh cilantro, chopped
2 bunches fresh chives, chopped

Where to find ingredients

You can find fresh shrimp and local produce at neighborhood markets or supermarket fresh-food aisles. Requeijão cremoso, a uniquely Brazilian creamy cheese, and annatto (colorau) can be found in specialized aisles or stores focusing on international imports. If unavailable, you may use a high-quality cream cheese as a substitute for the requeijão, though it will slightly alter the traditional flavor profile.

Preparation method

  1. Clean the shrimp thoroughly and marinate in lime juice and salt for 20 minutes.
  2. Rinse the shrimp once more and drain completely.
  3. In a large pan, sauté the crushed garlic in olive oil until golden.
  4. Stir in the chopped onion, annatto, and chopped tomatoes.
  5. Cook the mixture until the onion becomes soft and translucent.
  6. Incorporate the tomato sauce, seasoning powder, and chopped basil.
  7. Add the butter and the shrimp to the pan.
  8. Simmer over low heat for approximately 30 minutes, stirring occasionally.
  9. Stir in the requeijão cremoso and cook for 10 minutes, stirring until the sauce thickens.
  10. If needed, dissolve the cornstarch in a little of the sauce liquid before adding it back to the pan, then cook for 3 more minutes.
  11. Fold in the chopped cilantro and chives.
  12. Turn off the heat and fold in the table cream.
  13. Mix gently until you achieve a smooth, homogeneous consistency.
