Where to find ingredients
Sole fillets can be found at fishmongers, seafood counters or larger supermarkets; if unavailable, use another delicate white fish fillet as a substitute, keeping sole as ideal. Butter, white wine, flour, salt, pepper and thyme are available in supermarkets and general food shops.
Preparation method
- Coat the fish fillets in wheat flour
- Brown the fillets in a frying pan using half the butter
- Transfer the fish to a preheated clay baking dish
- Add one tablespoon wheat flour to the remaining butter and let it toast lightly
- Add the wine, salt, black pepper and thyme to taste
- Cook for 3 minutes
- Stir the sauce continuously during cooking
- Pour the hot sauce over the sole fillets and serve

This recipe prepares the fish elegantly, searing the fillets in butter and finishing them with a reduced white wine and herb sauce.
