Where to find ingredients
You can find fresh shrimp at local fishmongers or market stalls. For specific Brazilian pantry items like 'requeijão cremoso' (a creamy spreadable cheese) or 'colorau', check specialized international food stores or import aisles in larger supermarkets. As a substitute for 'requeijão', you may use high-fat cream cheese blended with a touch of heavy cream, though the original product is recommended for authenticity.
Preparation method
- Thoroughly wash the shrimp and marinate in the lime juice and salt for about 20 minutes.
- Rinse the shrimp again and drain completely.
- In a large pan, sauté the crushed garlic in the olive oil until golden.
- Add the chopped onion, annatto powder, and chopped tomatoes.
- Cook until the onion is soft and translucent.
- Incorporate the tomato sauce, beef-flavored seasoning powder, and chopped basil.
- Add the butter and the shrimp to the pan.
- Cook over low heat for approximately 30 minutes, stirring occasionally.
- Stir in the requeijão cremoso and cook for about 10 minutes, stirring until the sauce thickens.
- If necessary, dissolve the cornstarch in a small amount of the broth from the pan and stir it back into the mixture, cooking for another 3 minutes.
- Add the chopped cilantro and scallions.
- Turn off the heat and stir in the table cream.
- Mix gently until you achieve a smooth, homogeneous sauce.
