Where to find ingredients
Look for the shrimp and dairy in the seafood counter and chilled dairy section; buy pumpkin, onions, tomatoes, garlic, coriander, spring onions, lime and chilli at local produce markets or the fresh produce section. If you cannot find requeijão cremoso, the closest substitute is a mild, spreadable cream cheese, but the original is ideal.
Preparation method
- Sauté the garlic and onion
- Brown the garlic in the margarine
- Add the grated onions and sauté until they turn translucent
- Cook the shrimp
- Add the cleaned shrimp to the sauté, season with salt and let it cook for a few minutes until it turns pink
- Set aside
- Flambé the shrimp
- Heat the brandy in a pan
- Carefully ignite it and flambé the shrimp
- Once the flame goes out, add the curry, chopped tomatoes, coriander and finger chilli
- Mix well
- Add the cream
- Lower the heat and stir in the cream, stirring constantly
- Cook for a few minutes without letting it boil
- Turn off the heat and let it rest
- Prepare the pumpkin
- Wash and dry the pumpkin
- With a sharp knife, cut a lid from the top
- Using a spoon, scoop out the flesh and seeds, leaving a thin layer against the walls
- Wipe the inside with a damp cloth
- Grease and fill
- Spread the requeijão cremoso inside the pumpkin
- Fill with the shrimp sauce
- Cover with the cut lid and wrap the whole pumpkin in aluminium foil
- Bake the pumpkin
- Place in the oven in a bain-marie for about 1 hour, until the pumpkin flesh is tender when pierced with a fork
- If needed, cover again and keep baking until it reaches the desired point
