1 bunch fresh mixed herbs (parsley and spring onions)
1 bunch fresh coriander
4 lemons
1 medium onion
Salt to taste
1 tablespoon extra virgin olive oil
Where to find ingredients
Mullet (tainha) can be sourced from local fishmongers or fresh produce markets; if unavailable, ask for a firm-fleshed, whole oily fish of similar size. Fresh herbs like parsley, coriander, and spring onions are widely available at local greengrocers or supermarkets. Lemons, onions, and standard pantry staples like salt and olive oil are easily found in any grocery store or local food shop.
Preparation method
- Open the fish to remove the innards, making sure to keep the scales intact
- Rinse the fish thoroughly with water and lemon juice
- Season the inside cavity of the fish with salt to taste
- Finely chop the onion, along with some of the fresh coriander and mixed herbs
- Combine the chopped aromatics with a pinch of salt, a squeeze of lemon juice, and the olive oil
- Stuff the fish cavity with the prepared herb and onion mixture
- Sew the belly of the fish closed to keep the stuffing secure while it cooks
- Grill the fish over hot coals, turning carefully, until the scales become golden and crispy
- Serve your grilled fish hot alongside plain white rice
