Pressure Cooker Milk Flan

Ingredients

1 can sweetened condensed milk
2 eggs
1/4 cup boiling water
1 1/4 cups milk
3 cups water (for the water bath)
3/4 cup sugar

Where to find ingredients

You can find all ingredients at local supermarkets or grocery stores in the baking and dairy aisles. Ensure you have a standard 18 cm ring mold (flan pan) that fits inside your pressure cooker.

Preparation method

  1. Crack the eggs individually into a small bowl and transfer them into a larger mixing bowl.
  2. Whisk the eggs gently with a wire whisk to combine the yolks and whites.
  3. Add the sweetened condensed milk and incorporate it well into the egg mixture.
  4. Pour the milk in gradually, stirring delicately to avoid forming air bubbles.
  5. Set the flan batter aside.
  6. In a saucepan, melt the sugar over low heat until it reaches a golden color, stirring with a spatula.
  7. Carefully add 1/4 cup of boiling water to the caramel, being mindful of the splatters.
  8. Stir until the caramel becomes smooth and homogeneous.
  9. Pour the caramel into an 18 cm fluted ring mold, rotating the mold with a cloth to coat the bottom and sides.
  10. Sift the flan batter directly into the caramelized mold.
  11. Cover the mold securely with aluminum foil, folding the edges to seal it tightly.
  12. Line the bottom of the pressure cooker with a folded kitchen towel.
  13. Add 3 cups of water to the pressure cooker for the water bath and place the mold inside.
  14. Close the pressure cooker and cook over low heat for 10 minutes after it reaches pressure.
  15. Release the pressure from the cooker carefully.
  16. Check if the surface of the flan is firm; remove the mold with care.
  17. Remove the aluminum foil and let the flan cool to room temperature.
  18. Refrigerate for at least 3 hours before unmolding.
  19. To unmold, gently warm the bottom of the mold over the stove.
  20. Run a knife around the sides to loosen the flan, place a deep plate on top, and invert it in one swift motion.

Observations

Preparing flan in a pressure cooker speeds up the cooking time, allowing the dessert to be ready quickly. The secret to a smooth, hole-free flan is to mix the ingredients gently without incorporating air and letting the batter rest before cooking.
