Look for ripe papayas in the fruit section of your local grocery store or at a local market. Cashew nuts are usually found in the nuts and dried fruit aisle, or in specialty baking sections. Heavy cream is typically located in the dairy section near milk and butter. If you can't find cashew nuts, almonds or peanuts can be used as a substitute.
Preparation method
- Cut the papayas in half and scoop out all the seeds
- Scoop out the flesh of one papaya and process until it forms a smooth puree
- Dice the flesh of the second papaya into small pieces and set aside
- Whip the heavy cream with the sugar in a mixer until stiff peaks form
- Gently fold the papaya puree into the whipped cream, being careful not to deflate it
- Add the diced papaya pieces and fold them in carefully
- Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmold, briefly dip the bottom of the container in warm water
- Cut the ice cream into cubes, serve in bowls, and top with chopped cashews
- If desired, add a few drops of lime juice over the bowls for a citrusy touch
