Yogurt Flan with Guava Coulis (Flan de iogurte com calda de goiaba)

Ingredients

1 sachet of unflavored powdered gelatin
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (use the empty condensed milk can as a measuring tool)
2 cups (pots) of plain yogurt
6 medium red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the coulis)
1/2 cup of water (optional, to adjust consistency)

Where to find ingredients

You can find fresh red guavas in the produce section of local greengrocers or supermarkets, often imported or seasonally available. For the gelatin, look in the baking aisle. If fresh guavas are unavailable, high-quality guava paste thinned with a little water can serve as a substitute for the coulis.

Preparation method

  1. Hydrate the powdered gelatin in the 6 tablespoons of cold water.
  2. Dissolve the hydrated gelatin in a bain-marie until completely liquid.
  3. In a blender, combine the condensed milk, whole milk, plain yogurt, and dissolved gelatin.
  4. Pour the mixture into a ring mold lightly dampened with water.
  5. Refrigerate for approximately 4 hours, or until the flan is firm.
  6. While the flan sets, prepare the coulis by peeling and cubing the guavas.
  7. Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water.
  8. Simmer over low heat for about 20 minutes, or until the fruit is soft and beginning to break down.
  9. Remove from heat, transfer to a blender, and process until smooth.
  10. Return the mixture to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until it thickens.
  11. If the sauce becomes too thick during cooking, stir in the optional 1/2 cup of water to reach the desired consistency.
  12. Allow the guava coulis to cool completely before drizzling over the unmolded flan.

Observations

This yogurt flan with guava reduction is a classic Brazilian-style treat, celebrated for its smooth texture and refreshing profile. It is the perfect balance between the creamy, slightly tangy flan base and the sweet, aromatic intensity of the fruit sauce.

Preparing this dessert is straightforward, requiring basic pantry staples and a simple set of techniques. It is an ideal choice for those looking to serve a sophisticated homemade dessert without spending hours in the kitchen.
