Ingredients
1 tin condensed milk
1 jar peanut butter (smooth or crunchy based on preference)
1 packet (200 g) digestive biscuits or plain tea biscuits
1 tablespoon margarine
1 jar peanut butter (smooth or crunchy based on preference)
1 packet (200 g) digestive biscuits or plain tea biscuits
1 tablespoon margarine
Where to find ingredients
Condensed milk and margarine can be found in any local supermarket under the dairy or baking aisle. For peanut butter, look for standard smooth or crunchy spreads in the spreads section of your local grocery store. Digestive biscuits are widely available in the biscuit aisle of Kenyan supermarkets and small duka shops; if you cannot find them, any plain, non-creamy tea biscuit will work as a substitute.
Preparation method
- Crush the biscuits in a food processor or blender until you get a fine, sandy crumb texture
- In a mixing bowl or stand mixer, combine the condensed milk and margarine, beating until smooth and well-combined
- Gradually add the peanut butter to the mixture, continuing to beat until everything is fully incorporated
- Remove the mixture from the mixer and transfer it to a large mixing bowl
- Add the crushed biscuit crumbs little by little. Mix and knead by hand until the dough is firm, well-blended, and easy to shape
- Press the mixture firmly into a rectangular baking dish or glass container
- Place in the fridge and chill overnight, or for at least 8 hours, to ensure it sets firmly
- Slice the paçoquinha into small squares before serving
