Lentils, olive oil, onions, garlic, cumin, bay leaves, salt, and pepper are commonly found in the pantry or produce sections of most supermarkets. Specialty spice shops or international food aisles may offer a wider variety of cumin, but standard ground cumin is perfectly suitable. Ensure lentils are rinsed before cooking.
Preparation method
- Chop the onion and garlic into small pieces
- Heat the olive oil in a pressure cooker over medium heat
- Sauté the onion with a pinch of salt until lightly golden
- Add the minced garlic
- Stir in the cumin and bay leaf
- Sauté for about a minute to release the aroma of the spices
- Add the lentils
- Season with black pepper and one teaspoon of salt

- Close the lid and increase the heat
- As soon as the cooker reaches pressure and starts to whistle
