Olive oil to taste
Salt to taste
Juice of 1/2 lemon
1/2 teaspoon coriander seeds
Olive oil to taste
Salt to taste
Where to find ingredients
You can find fresh produce and spices at local farmers' markets or neighborhood supermarkets. As a substitute for fresh coriander seeds, you may use a pinch of ground coriander, although the texture will differ.
Preparation method
- Wash the zucchini skin well under running water using a vegetable brush
- Dry with a clean kitchen towel
- Remove and discard the ends
- Cut the zucchini crosswise to separate the thicker part from the thinner end
- Slice the thick part in half lengthwise and cut each half into three strips to create sticks
- Divide the thin part in half crosswise so all pieces are of similar size
- Cut each of these pieces into four parts
- Heat a non-stick skillet over medium heat
- Add a drizzle of olive oil and arrange the zucchini pieces with the cut side facing down
- Grill for about 2 minutes until golden brown
- Lightly crush the coriander seeds in a mortar to release the aroma
- Turn the sticks over using tongs to brown the opposite side
- Add the coriander seeds, season with salt, and add a little more olive oil
- Sauté for 1 more minute until the zucchini is tender and seasoned
- Finish by turning off the heat and incorporating the lemon juice
- Serve immediately
